Paleo Pumpkin Muffins

So, this recipe is a life saver when you are craving carbs and sweets and not permitting yourself to have them!  The Whole Life Challenge has been tough at times, but these muffins have made it better :-) I love you muffins…I’ll love you forever and always!

Get ready to have some melt in your mouth muffins!

Paleo Pumpkin Muffins

- 1/2 cup almond meal

- 1/2 cup coconut flour

- 2 eggs

- 1 cup pureed pumpkin

- 6 dates, pitted (buy dates with the pits in them and pit them yourself; they are much more moist!)

- 1/2 tsp ground cinnamon

- 1/4 tsp ground nutmeg

- 1 tsp sea salt

Directions:  Preheat oven to 375 degrees.  I recommend lining a muffin tin with muffin liners, but if you don’t want to do that, GENEROUSLY grease your muffin tin.  In a food processor, add your dates and a 1/2 cup of hot water.  Puree until a paste is formed and set aside.  Next, whisk your eggs.  Then add in your date puree and pumpkin.  Whisk to combine.  Add in your spices and salt.  Next, slowly add in your almond meal and stir to combine, then your coconut flour.  Use an ice cream scoop to put an even amount of the mixture into each muffin spot.  Bake for about 20-25 minutes or until the muffins are browned and slightly firm to the touch.  Let cool and then enjoy!  I like to reheat these for 30 seconds with some almond butter on top for a delicious snack or breakfast item :-)

    These look delicious. I’m always looking for healthier baking recipes. I like the tip with the pitted vs non-pitted dates too. Sometimes I feel like I get a bad batch so I’ll have to be more aware of this.
