My Head Is Falling Off!
Or at least that is how I’ve been feeling these last few days! Sorry I’ve been MIA, but my energy has been waning and I’ve also been OBSESSED with covering pillows in my valiant effort to complete my couch covering/living room renovation project and I’ve actually been pleased with the end product. I’ve got stab wounds in every flipping finger from straight pins, but that is beside the point, right? Focus on the end goal, Alyssa!! FOCUS!!!
So, I am going to take us back in time to some food that I’ve devoured but didn’t have the time/nor discipline (let’s just be honest and put that out there) to share. Buckle up!
After a 7 mile run with my buddy Dani (if you are reading this, I want to go rock climbing soon!!) I came home famished! I begged Hubs to make me some good ol’ scrambled eggs and he added in some delish white cheddar (before the challenge of course!). On the side some GF toast with Kerrygold butter. This breakfast was fantastic and so simple. Held me for a few hours at least

Haven’t had any of this since Saturday with the start of the challenge…funny thing, I don’t miss it
But I will happily indulge when we go to Napa Valley!!! I might lose points while there.
I’ve been using Wellness Mama for meal ideas for my challenge and loving her combos! This is her Chard Wrapped Salmon (although I used collard greens) and we loved it!
On the side, sauteed collards and cauliflower rice (getting ready to post this recipe soon!!). Yum!
So, the WLC started Saturday as you may have read in my last post and I felt that I rocked the Baseline Workout! I am nervous for the final baseline though…I think my pride will be enough to get me through my 12th or 13th rounds, but I’m going to put in my sweat equity now so I have no excuses! As a treat, Hubby offered to take me to the Tanger Outlets in Jeffersonville, OH. I couldn’t believe how close these shops were, but I felt like we were in the middle of Kansas or something. Check out this drive!
Yea, it was like that for 25 miles. Nuts.
We took advantage of some amazing President’s Day sales and came home with a giant bag between the two of us!
And a little snack to tide my crazy munchies over…

When we got home, we had an awesome surprise waiting for us!
Wahoo!!!! I entered a giveaway over at my friend Sunnie’s site, Modern Girl Nutrition, and won these Way Better Chips! Hubby broke into them IMMEDIATELY and has devoured at least a bag or two. They were divine! Super crunchy and crispy, GLUTEN FREE, and quite healthy for your average chip snack food. Thank you Sunnie and Way Better Snacks!

Those eggs look good – I really can’t wait to get back to gluten free! What have I been up to? Had my blood test today for Coeliac Disease so should get the results in a week to 10 days – got to admit I’m hoping it’ll be that I’m gluten sensitive but not intolerant so I can just go back to gf – if it shows as intolerance I’m going right through to the biopsy to get the medical diagnosis as you can get some prescription gf food here in the UK.
I know exactly what you mean. I was much more convicted to gluten free eating once I knew that I needed to eat that way. It is much harder as a preference. Italy gives its citizens a gluten free stipend for those that must eat gluten free also! I wish we did that in the states. It can certainly be expensive at times! Good luck to you!
