Sunny Side Up!

One thing I love about the weekends is that Hubs and I get to eat a nice, relaxing breakfast together before anything else!  Sunday mornings, I am especially tired…not sure why, but this morning, I groggily rolled out of bed at 8 and offered to whip up a delicious egg sandwich!

Today was also my final day on the “cleanse”.  14 days later, I don’t feel “clean” per say, but it did help to bring about some regularity in my stomach issues.  I also think that the evening pill regiment induces bloating…no bueno.  Oh well, I guess I’ll see what the real effect was after I get off of them!  Geesh…my hands look wrinkly…

Voila!  I whipped up some bacon (Hubby likes it made in the microwave for extra crisp.  I swear this is the healthiest way to do it too because the grease just melts right out…oh and it is by far the cleanest way to make bacon.  A big PLUS for me!), eggs sunny side up, and topped a toasted GF (Glutino) English Muffin with all of the above, plus a dollop of pesto.  I love pesto, but I find it goes bad quickly, so I begin to use it on everything.  Not a bad thing, but it isn’t the healthiest of condiments!  And a lovely clementine on the side :-)

I cooked the egg in Kerrygold Grass Fed Butter and also toasted the muffin in the residual as well.  Love that stuff!  Plus, it is considered to be Paleo…bonus ;-)  To drink?  Mint Green Tea and Hubby’s homemade juice!  It is so good!  Apple, Cucumber and Mint juice…that man knows how to juice ;-)

Now he’s off to tennis and I’m headed to 90 minutes of pure hot yoga bliss!

Oh, and this might be jumping the gun, but I’m planning to do the Whole Life Challenge through Centerville Crossfit starting in February!  I’m so excited, I’ve always wanted to do a Paleo challenge.  Have you ever done a whole body or diet and fitness challenge?  What would your goals be for the duration of it?

    I love pesto! Especially homemade:)

      I really should whip up a version of Paleo pesto :-) I’m sure it would be just as delicious!
