Comfort Food for a Cold OH Day

I woke up STARVING!  Probably because I didn’t get to eat much at my own party :-( I’m so busy entertaining that I don’t get to enjoy it!  Must learn to relax and simplify.  For breakfast?

Nothing like a 2 Ingredient Pancake!  Egg, banana and coconut oil to make sure it doesn’t stick.  I topped mine with my homemade almond butter, blueberries and shredded coconut.  It really hit the spot!

It was quite a chilly day, so I made sure I was fully bundled!

I’m looking thoroughly enthused while Hubby snapped my pic!  I then took Beaubie for a 5 mile walk!

He was such a good boy!  We also went and saw Les Mis to occupy us during the day.  It was wonderful, but I didn’t sob like I thought I would…perhaps the cold weather chilled my heart as well?

For dinner, I just wanted something warm without too much effort.  The end result?

I roasted up some butternut squash and brussels sprouts.  On the side, I pan seared some leftover shredded pork in grass fed butter (which I think I need to remove from my diet…I think that little dairy gives me issues as well!) and topped with chives, thyme and pesto.  This bowl put me over the edge.

Do you have problems with portion control?  For some reason, I tend to pile my plate super high at dinner time! How do you ensure you eat the proper portion?

    Wow the pancakes sound great! Is it like a 1 egg to 1 banana ratio? Mashed together then fried in the coconut oil? Sounds really good!

      Jennifer, they are delicious!! I’ve followed Tina’s recipe in the past, see it here. But essentially, you mash the banana inside the peel (don’t squeeze too hard or it comes gushing out!), then empty the mashed banana into a coffee mug, add your egg and whisk until smooth. Then I heat my frying pan on medium-medium high heat and add in about a tbsp of coconut oil (the more the better because it definitely won’t stick). Cook for about 2-3 minutes on each side and be sure to use a BIG spatula to flip them or make 2 smaller cakes. They are great! Gluten free, paleo, and with the right toppings can fill you to the brim for several hours. You can also make with 2 eggs for a lighter consistency. Enjoy!

      They are great! Consistency is a little heavier than a normal pancake, but they’re so easy to whip up you won’t feel bad tossing it if you disagree ;-)

    MmMmMm pancakes! The ultimate comfort food!!!

    I would say MOST DAYS I don’t have a problem with portion control…But there are times in which it seems I am a bottomless pit and could eat and eat and eat! I’d say I have a pretty firm handle on it though…

      I’m only bad at dinner and I think its because I usually serve myself while hungry :-) I pack my lunch the night before AFTER dinner, so I’m never hungry, hence why the portions are juuuust right. You lucky duck :-)

    I’ve been meaning to try those 2-ingredient pancakes – thanks for the reminder! I used to eat a huge portion at dinner time, but I’ve found that since I made my breakfasts a bit larger and added healthy snacks throughout the day, I don’t need to eat so much at night. I also find that enjoying a glass of wine (or another beverage) with my meal makes me slow down and savor, which ultimately causes me to eat less.
