Pork Tenderloin with Fig and Balsamic Glaze

Our most recent kick in the GFM house has been to meal plan on Thursday evening and then I hit the commissary on Fridays. I realized that I had been far exceeding my grocery budget, so I was attempting to restrain myself a bit :-) Our cookbook of choice for recipes?? Cooking Light: Fast and Easy! Every recipe is only 20-30 minutes in length (both prep and cooking) and all meals are 500 calories or less (usually less). Additionally, this makes everything really easy for Hubby to prep since he usually gets home before me.

The pork was cooked in a 400 degree oven after being seared in a saute pan on all sides. We also added in chopped and dried figs and balsamic vinegar to reduce in the oven. Delish!

On the side? Hubby and I split a baked sweet potato with maple cinnamon butter drizzle. And he says he doesn’t like sweet potatoes…;-)

I ended up eating a bit more than the serving size, but it was so delicious! Plus pork tenderloin is low in fat anyways :-)

Are you a pork eater? Apparently it is the new “white” meat!
