Coconut Banana Bites
What if I told you that I was successful in creating an absolutely scrumptious gluten free, vegan, and sugar free cookie? You would probably do the following: a series of somersaults followed by karate kicks and cartwheels while simultaneously screaming “YIPEEEEEEEE!!!” Or, at least, that’s what I did
I present to you: COCONUT BANANA BITES! Hubby says I shouldn’t call these cookies because he doesn’t find them sweet enough, but I thought they were amazing. The perfect bite sized morsel packed with banana and coconut power!
Coconut Banana Bites
- 2 cups coconut flour
- 1/4 cup arrowroot starch
- 1/2 tsp xantham gum
- 1/4 tsp guar gum
- 2 tbsp flax meal, 2 tbsp water=flax egg
- 3/4 cup almond milk
- 1 tsp vanilla
- 2 cups “melted banana” (microwave to soften)
- 1/4 cup coconut oil
- 1 tsp cinnamon
- 1 tsp salt
- 1/4 cup coconut
- 1/4 cup crushed walnut
- 1/4 cup dried fruit
(If not sweet enough, you can add additional sweetener. I made one batch as above, and then for the subsequent batches I added 1/4 cup agave nectar for Hubby)
Directions: Pre-heat oven to 350 degrees. First blend wet ingredients and separately blend dry. Add dry into wet and mix thoroughly. Once mixed, scoop out cookie dough onto cookie sheet. If you want the cookies to stay as little balls, leave them as is. If you want them in more of a cookie form, you will need to smash them flat. Because of the ingredients, the cookies don’t really spread. You’ll want to bake them for about 11 minutes so the cookies are golden brown. Top the cookies with melted coconut butter and enjoy!

Oh my goodness, these have my name written all over them. You really can’t go wrong with a good banana/coconut combo. Bet they are amazing topped with the melted coconut butter. Any leftovers?
